VEGETABLE FRIED RICE

Rice - 4 Cups - soak for 20 mins. wash, drain & keep in cooker Bucket,
1/4 kg of each Carrots, Potaotes, Cauliflower,
Peas,Beans - Cut into
cubes & kept.
6 Big Onions sliced finely,
8-12 Green Chillies slit in
two & kept,
1 Bundle Green Corriander washed & Chopped,
Curry leaves few;
Mint leaves 15-20 no's;
Salt to taste
Spices (Pattai 2" pcs. 3 nos; Cloves 14
no's; Elakas - 8 nos).
1/4 cup Oil.
Water 7 Cups.
Use an Electric Rice Cooker.
Cut the Vegetables lengthwise wash& keep aside.
Slice Onions & fry, add the Green Chillies, Curry Leaves, Mint Leaves,
Spices, Corriander leaves, Salt & fry nicely.
Add the vegetables & fry on low heat for 2 mins.
Add all the fried ingredients to the Rice in the Cooker Bucket, add 7
cups of Water, cover the Cooker & plug it on. Let it cook - it will
automatically cut off when Rice is done.
Fluff up the Rice with a Fork.
For Plain Fried Rice same Recipe as above but do not add Vegetables.
