Shrikhand

Ingredients: (To serve -- 6)

1. Natural Plain Yogurt ( Dannon) -- 64 oz

2. Sugar to taste -- approx 1/2 cup

Method:

1. Put a sieve over a small bowl. Line the sieve with a double layer of thin muslin or cheese cloth. Empty the yogurt into the sieve. Let the water drain in the bowl. Tie the corners of the muslin tightly with a string. Put 4 lbs of weight on top to extract remaining water. Leave for upto 2 hrs.

2. Now, Put the yogurt into a mixing bowl. Add sugar. Beat for 4-5 minutes (or until smooth and thick). Serve chilled.

Note: You can use handi wipes or a dupatta instead of muslin cloth. You can just tie the end of the cloth and leave it hanging with a bowl under for two days instead of keeping weight on it and getting the shrikhand in just two hours. Also, you can make mango shrikhand by simply adding mango pulp at the end. Mix well.
