Dhudhi Koftha

Ingredients: ( To serve-- 4)

1. Dhudhi (Bottlegourd) -- 1 lb
2. Vegetable Oil -- 2 tbsp. (Also, you need oil for deep frying)
3. Besan (gram flour) -- 1 1/2 cups
4. Onion -- 1 (finely chopped)
5. Grated ginger  and chopped garlic -- 1tbsp. each
6. Jeera (cumin seeds) -- 2 tsp.
7. Tomatoes -- 2 (finely chopped)
8. G.Chillies -- 3 (chopped)
9. Garam masala and Red Chilli Powder(cayenne) -- 1  tsp. of each
10. Salt to taste
11. Cilantro (coriander leaves) -- 1/2 cup

Method:

1. Remove the skin of the dhudhi and the seeds. Grate the remaining part of the dhudhi.

2. Add salt to the grated dhudhi and remove the water from the dhudhi using your hands(Take a little dhudhi in your hands and press firmly until the water is squeezed out).

3. Make a paste of besan, chilli powder and a pinch of bakinf soda. Make balls of the dhudhi and deep fry it. Remove from oil and make a few holes using a toothpick  in the dhudhi balls after it has been cooled. Keep aside.

4. Grind ingredients number 5, 7 , 8 and 9. Add a little water, if necessary. Keep aside.

5. Heat 2 tbsp. of oil in a pan and jeera and turmeric powder to it. Add the onions to the pan and fry.Add the ground paste to the pan.

6. Cook for 5 minutes and then add the dhudhi balls to the pan and cook again for 5 minutes. Garnish with chopped cilantro.

Note: Serve immediately. If serving later, try to add the dhudhi balls before serving and allow it to cook for 5 minutes.
